Apple, Raisin & Cinnamon Muffins

Makes 12 muffins

3/4 cup cooking oil
1 cup sugar
2 eggs
1 1/2 cup all purpose flour
1 tsp cinnamon
1 tsp salt
1 tsp baking soda
1/4 cup apple juice
1 apple - peeled, cored and grated
1/2 cup raisins

Grease and flour muffin pan.

In a large bowl, whisk together oil, sugar and eggs ensuring they are thoroughly mixed.

Sift flour, cinnamon, salt and baking soda into mixture and combine. Stir in apple juice, apple and raisins. Mixture should be fairly runny.

Pour into muffin pan and bake at 190 degrees centigrade or 350 degrees Fahrenheit for 15-20 minutes. Cooked muffins should spring up in the centre when touched with a fingertip.

Turn out onto a cooling rack and serve warm with butter if desired.
